Cally Bao was born from a simple idea—to take the soft, pillowy bao bun and infuse it with the bold, unapologetic flavors of Africa. Founded in 2023 by Chef Ebenezer, a Nigerian-born chef with a rich background spanning street food, hotels, corporate dining, and gastropubs, the brand quickly became a must-visit destination in the heart of Westminster.

Tackling the lack of representation and commercial display of African cuisine in the UK is a journey that requires dedication, innovation and a deep appreciation for the culinary traditions of my continent. Through education, fusion and a commitment to authenticity, I’m confident that African cuisine will find its rightful place on the tables of the UK and be celebrated for its diversity, complexity and the stories it tells about the people and cultures of Africa.
Chef Ebenezer’s journey has been shaped by years of exploration, mastering the art of balancing tradition with innovation. At Cally Bao, he reimagined African flavors through a contemporary lens, bringing together heritage and craftsmanship to create something entirely new. There are some things in life worth queuing for, and the bao buns at Cally Bao were one of them. The Moi Bao and BBQ Oxtail Bao were standouts, wrapped in light, handmade buns that soak up every ounce of flavour. The menu was rounded out with traditional snacks and beverages like zobo and plantain crisps.
Rooted in authenticity, driven by creativity, and powered by a passionate team, Cally Bao was more than just a place to eat, it was an experience, a cultural meeting point, and a love letter to the rich flavours of Africa.
